From Queixería Santo André (Castroverde, Lugo), Carlos Reija has become one of the great drivers of traditional Galician cheese making, achieving some of the sector’s most prestigious awards (for example the Best Cheese in Spain at the Salón Gourmet 2015) and recovering the almost extinct tradition of cured Queixo de O Cebreiro.
