Jorge Agrasar represents the new culinary generation from la Costa da Morte. Son of Fernando “Caco” Agrasar, he has been immersed in this professional since a child, seeing his grandparents and parents take this family business to the top. These days, the restaurant As Grazas (Malpica, A Coruña), right in front of the Atlantic ocean, boasts a Michelin star, demonstrating that traditional flavours are also a synonym of haute-cuisine.

As Garzas is a market kitchen based on fish and seafood. The produce is the star of the dishes, which demonstrate traditional Galician cuisine, but with a modern vision in terms of their elaboration and delicate contemporary influences. This can be seen in the whole service, from the region’s fish and seafood, to the preparations of the meat and vegetables and the delicious, varied confectionery at the hands of Jorge Agrasar.
