Javier Olleros belongs to a family with a tradition in hospitality in O Grove (Pontevedra), with his parents owning the Hotel Mar Atlántico in said town. He studied cookery at the CSHG (Hotel Management School of Galicia) in Santiago de Compostela, after which he worked at Casa Solla with Pepe Solla, with Sergi Arola in La Broche de Madrid, and in Zallo Barri (Gernika). He also learnt from Seiji Yamamoto in Tokyo. In 2009 he opened Culler de Pau in O Grove with a decided bet on contemporary Galician cuisine.
His creative, emotional cuisine with local, seasonal produce leads to a perfect fusion of flavours from the land and sea. In 2012 he earned a Michelin Star.
