Andrés Médici (Bahía Blanca, Argentina) started his training in Japanese cuisine in 1998 at the hand of the prestigious chef Iwao Komiyama- recognised in 2009 by the Japanese government as the best chef of Japanese cuisine outside of Japan- with whom he spent more than three years learning the techniques of traditional Japanese cuisine and respect for the produce. After working at the Restaurant Taro Guadalpín in Marbella, and the Hotel Hermige in Andorra, in 2006 he arrived in Vigo to open purOsushi.
Always constantly learning, Medici has an official AJSA certification which enables him to teach sushi techniques. His cuisine is meticulous, deep and minimalist, mixing traditional techniques with other more innovative ones.
He will participate in the SAL A Coruña Atlantic Flavours Festival in an Atlantic Jam Session alongside Gerson Iglesias (As Caldas) and Iria Espinosa (Árbore da Veira*).
