Trained in hospitality at CIFP Compostela, Ana Portals specialised in Avant-Garde Culinary Techniques at the Basque Culinary Center. In 2015, as chef at A Curtidoría, she became the first woman to reach the final of an award organised by said centre. She did not win, but it acted as a way of revolutionising the gastronomic panorama of Galicia with her simple vision of traditional cuisine. After a thirteen yearlong professional career in renowned restaurants such as Arzak and Casa Marcelo, in 2017 she opened her own personal project: Solleiros, the restaurant in the Hotel San Miguel in the heart of the old town of Santiago de Compostela.
She will participate in the SAL A Coruña Atlantic Flavours Festival in an Atlantic Jam Session alongside Jorge Gago (A Maceta) and Marco Varela (Sábrego).
