The young chef from Lalín, Marco Varela, has a long history and list of acknowledgements. In 2011, as executive chef at the restaurant Dona Branca del Palacio de Sober (Lugo), he won the Galician Championship of Professional Chefs. This prize allowed him to be crowned that year as one of the top three chefs in Spain at the Salón Gourmets in Madrid. In 2016, the winery Casal de Armán (Ribadavia) opened the restaurant Sábrego, with Marco Varela leading the project.

His cuisine with deep roots tastes of the produce, the sea and the land. Flavour dominates in his signature dishes, with contemporary presentation, which obviously use Galician, ecological, high quality produce. At Sábrego, the chef offers a gastronomy that perfectly combines with the best Denomination of Origin Ribeiro wines.

He will participate in the SAL A Coruña Atlantic Flavours Festival in an Atlantic Jam Session alongside Jorge Gago (A Maceta) and Ana Portals (Solleiros).
